These are sooo good! I did the Mexican rice, but added half a can of rinsed black beans while it was simmering. I should have lowered the amount water. Tasted delicious, but a bit softer than it should have been. Either way, the softer rice made up for the moisture. Topped with salsa and sour cream, Monterey Jack cheese, and cilantro. Made these for dinner and it was a hit.
